Cream together and don’t forget to use a spatula for scraping and for when you pour it out. You do not want One Drop of this delicious cream cheese mix left!!!! I could eat cream cheese allllll day! And my younger brother could to, actually probably all my brothers could and my sisters, ha! ^-^ We are such a wonderful, cream cheese loving bunch! Somehow my recipe messed up a little though… it was probably the seperated cream cheese. This is a runny and it is supposed to be thicker, a lot thicker.

Pour the first layer of this double layer, creamy, goodness pie! Mmmm! Right into my lovely, 2nd ever homemade, rolled out pie crust. That recipe is below this one and it is verrry nice and not hard. It makes 3, so you freeze them and they turn out flakier. Yes, I have officially entered the wonderful world of roll-out pie crust, homemade.

Here I decided to add a festive touch! Since this is a Thanksgiving kinda pie, but it is well on the way to Christmas!! I added about 1 Tbsp. of fun green, red, and white sprinkles on top of that. Thank you Lord for giving us Christmas, it is fun and beautiful and life changing! And I am not talking about the presents or the food. ;-)

Here we have 1/4 c. brown sugar (or use 4 Tbsp., they are easier to pack in), 1 1/4 c. pumpkin puree, and 1 c. evaporated milk.

Then you toss in 1 tsp. cinnamon, 1/4 tsp. ginger, 1/4 tsp. nutmeg (I have heard that freshly ground is the best!), and a dash of salt. Now beat it until it is smooth and creamy and ready to jump on top of the cream cheese mixture!

All set to be popped in the oven! I completely forgot to take a picture of the pumpkin mix! Oh well, you can see it swirled in with the cream cheese mix. And yes, this is supposed to be Layers… but it is swirled and mixed together instead. Still yummy though! And pretty!
