Here is a great tip for eggnog use! Buy or make some and use it in place of creamer for your coffee!! Mmmmm, yummy! I am doing it right now. I am going to make some and will be posting that experiment up soon.
I remember coming home from visiting my grandparents and my dad whipping up some in the blender. It was very good! It inspires me, cause I love eggnog! And the sweet little coffee shop in the thrift store down the street just closed! The higher ups, the little stinkers, think that it does not bring in enough revenue. I think they are sadly mistaken and will hopefully figure it out before they sell the goods!

The many ingredients that will be making my dream pie! I really dreamed this up before I found my friend Susan at raisentoast.typepad.com had it!!! She got it from her wonderfully inventive friend Beth!!! Sigh! I love cooking, it is so fun and community building!! I wish we could all get together and make heaven in the kitchen! I need to make some friends out here who love cooking! Do you see how I split the ingredients for the different layers of pie? I think I am mighty clever sometimes, hehe.
Sugar, cream cheese, vanilla, orange zest (or lemon juice), eggs, pumpkin puree (canned or fresh), cinnamon, nutmeg, ginger, evaporated milk, brown sugar (I had dark), salt, and my special addition of decorative sprinkles!! Hey, it’s almost Christmas!!! YAY!!!!
I was so excited when I realized I had oranges to get zest from for this pie….. However, my plan failed! The silly grater would not do what it was supposed to! So I will be using this lemon juice instead. And planning on adding a zester to my Christmas list!! I could spend some serious moola on cooking and baking toys/gadgets!!
Put the 1/4 tsp. of lemon juice, 1/2 tsp. of vanilla, 8 oz. of cream cheese, 1/4 c. sugar, and 1 egg all together in a bowl. My cream cheese was frozen, that is why it looks funky, but it is still delicious!! I think I need to melt it a little in the microwave next time I take it out of the freezer. When it freezes the cheese seperates and melting puts it all back together.
